I won a blue ribbon and sweepstakes for these cupcakes at the 2012 Kansas State Fair, meaning they were judged not only the best carrot cake, but also the best of all cakes submitted for judging that year.  These cupcakes come fully loaded with carrots, pecans, coconut, and pineapple, all folded into a cinnamon-laced batter.  Topped with Veronica’s special cream cheese frosting and more pecans.  These are truly out of this world!
