Andes Mint

Moist chocolate cupcakes filled with peppermint ganache, piped with a refreshing swirl of fluffy, creamy mint frosting, and topped with more peppermint ganache, and an Andes mint.  Shamrock sprinkles (as shown) add a festive touch and make these cupcakes perfect for Saint Patrick’s Day, otherwise they are really wonderful at Christmas-time.  Or, let’s get real here, any time. 🙂
